Halved bell peppers are stuffed with a mushroom, onion, and tomato frittata and then topped with a spicy vegan sausage crumble made out of lentils and walnuts for the perfect Sunday Brunch meal!


Thankfully, going vegan doesn’t mean giving up all the foods you love. There are so many ways to substitute and replicate your old favorites for new, plant based wonders! Just Egg is an amazing replacement for eggs and the a main ingredients are water, mung beans, and canola oil. With Just Egg you can make scrambled eggs, frittatas, or use it as an egg replacer in baking because it has an identical texture to eggs and a taste that is very similar to eggs (but in my opinion much better!).
The sausage crumble is made from lentils, walnuts, and onions and is flavored with a special spice blend to taste just like sausage. This dish is versatile and you can switch up the ingredients in the frittata for anything you have on hand or want to put in it.

How to make Just Egg Frittata Stuffed Bell Peppers with Vegan Sausage
Vegan Sausage Crumbles
First, we’ll make the lentil and walnut based sausage crumbles using our own homemade sausage spice blend. To do this cook brown or green lentils according to the package instructions. Then add fennel, paprika, garlic powder, onion powder, red pepper flakes, dried sage, salt, and pepper to to spice blender, coffee grinder, or mortar and pestle and blend together until the fennel seeds are broken down.
Now add the cooked lentils, walnuts, onion, garlic, fresh parsley, and the spice blend to a food processor. Blend for a few seconds and then pulse a few times until it comes together in a fine crumb. Sautee over medium-high heat for 5 – 7 minutes or until the onions soften and the mixture is slightly browned.



Just Egg Frittata
Next we’ll clean the skillet, and then sauté the mushrooms and onions in a little bit of oil oil for about 5-7 minutes over medium heat. Then add the diced tomatoes and cook for one more minute.
In a large bowl, combine one carton of Just Egg with the mushroom mixture.



Assemble the bell peppers!
Cut the bell peppers in half lengthwise. While cutting, keep in mind that the flatter the bell pepper is, the easier it will stay upright on the baking dish. It also helps to arrange the bell peppers snuggly in the baking dish, so that they do not tip over. You can also use balled up pieces of foil to help support your peppers if they are tipping over.
Once the peppers are arranged in a baking dish, fill each one nearly to the top with the Just Egg filling. Then top each one with a generous portion of the the vegan sausage crumbles. Bake in the oven at 400°F for 45 mins.

Frittata Stuffed Bell peppers with Vegan Sausage
Equipment
- Spice blender, coffee grinder, or mortar and pestle

Ingredients
Vegan Sausage crumbles
- 1/2 cup brown or green lentils 60g
- 1/3 cup packed cup walnuts 33g
- ½ small yellow onion diced
- 2 cloves garlic
- 1 cup parsley packed and chopped
Sausage spice blend
- 1/2 tsp Fennel
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp pepper
- 1 tsp salt
- 1/4 tsp red pepper flakes reduce or omit for less spiciness
- 1 tsp dried sage
Just Egg Frittata
- 1 Carton Just Egg 16 oz
- ½ yellow onion diced
- cremini mushrooms 8 oz
- 1 beefsteak tomato diced
- 3 bell peppers cut in half lengthwise
Instructions
- Cook the lentils according to package instructions.
- Add the spices to a spice blender, coffee grinder, or mortar and pestle and blend together until the fennel seeds are broken down.
- Add the cooked lentils, walnuts, ½ of the diced yellow onion, garlic, parsley, and spices to a food processor. Blend together briefly and pulse until the ingredients come together into a fine crumb.
- Preheat the over to 400°F
- In a skillet, heat a drizzle of oil over medium heat. Add the lentil-walnut crumble and cook, stirring occasionally, for about 5 - 7 minutes or until the onions are soft and the mixture is starting to brown.
- Set the mixture aside, clean the skillet if needed, and then add the mushrooms and the rest of the diced onions to the skillet. Cook for about 5-7 minutes or until the onions and mushrooms have started to soften. Then add the diced tomatoes and cook for 1-2 minutes. Add salt and pepper to season. Remove from heat.
- Cut the bell peppers in half lengthwise and place on a baking sheet. Arrange the peppers closely on the sheet to help prevent them from tipping over. You can also use rolled up balls of foil to help prevent the peppers from tipping over.
- In a bowl, pour 1 container of Just Egg. Add the mushroom, onion and tomato mixture and mix thoroughly
- Fill each pepper to nearly the top with the Just Egg mixture, and then top with the lentil and walnut sausage crumble.
- Bake or 45 mins and allow it to cool for 10 minutes before serving.
