This Southern-style Vegan Peach Cobbler is insanely delicious! A buttery batter is topped with cinnamon spiced peaches, sliced bananas, and a sweet syrup. It is baked to perfection with a soft, moist, and fruity interior and a crispy top. This cobbler pairs perfectly with vegan vanilla ice cream for the most amazing summer dessert.
I genuinely had a great time making this dish! It was so fun to assemble and it was an instant hit with my friends and family, that I ended up making it four times this week! So this recipe is well tested and I am sure you are going to enjoy it from start to finish.
What exactly is a cobbler and what is the difference between a southern style cobbler and a northern style cobbler?
A cobbler is a fruity dessert dish with a crust on top resembling a cobble road because of how bumpy and lumpy the crust gets on top. In North America, its more traditional to put the biscuit type batter on top of a fruit filled base. But down here in the south, we like to mix our batter with lots of (vegan) butter and then drown it with fruit filling and a sweet syrup! When it cooks, the batter rises around the fruit filling and creates a crust on the bottom, the top, and all throughout the cobbler. The crust is soft and creamy on the inside and more well done on top, and the result is stunning!
How to make Southern-style Vegan Peach Cobbler
The Peaches 🍑
I used fresh, just ripened peaches, and then reduced them on the stove in a mixture of brown sugar, cinnamon, nutmeg, water, and a cornstarch slurry to help thicken up the resulting syrup. I didn’t think it was necessary to peel the peaches and it was a time saver to skip this step, but if the texture of the skins bothers you, you can peel the skin off easily by blanching them first. Also, if peaches are out of season, frozen peaches can be subbed for the fresh peaches.
The Butter🧈
Once you’ve started reducing the peach mixture, take 1/2 cup of vegan butter and place it in the baking dish. I used a 3 quart, 9 x 13 baking dish (with a lid to bring it to get togethers). Put the baking dish in the oven and preheat to 350°F. The butter will melt and the baking dish will heat up in preparation of one of the next steps. I tested two types of butter, the Miyoko’s vegan butter was my favorite because it actually started to turn brown in the oven like regular butter. But Trader Joe’s vegan butter (pictured below), while it didn’t brown in the oven, performed equally well in the taste department!
The Batter
The batter is a simple mixture of flour, brown sugar, baking powder, salt, soy milk, and vanilla. You should end up with a pretty somewhat thin, pancake like batter.
Assembly!
Assembling the cobbler is fun and easy. First you need to ladle the batter slowly into the butter mixture. Its important to create a sort of matrix of butter and dough, so don’t try to mix them together at this point. You’ll want to get good coverage throughout, but don’t abandon the edges and corners, where you’ll get the crispiest parts of the dough when it’s done cooking. This part is cool since the butter and dish are already hot, the dough starts to cook right away.
Once you’ve poured in all the batter, gently scoop your peach mixture on top of the batter. Try to get even coverage across the entire cobbler. This is the part where I add my own little delicious twist to this recipe. I cut up one banana and hid pieces throughout the dish. It a surprising sweet addition that goes perfectly with the cinnamon and nutmeg seasoning of the peaches. The banana is optional, but if you have one around I highly recommend giving it a try!
The last step you need to do before popping this in the oven is to pour any left over syrup from the peach mixture evenly across the entire cobbler. This syrup is going to add so much flavor and moisture. Its absolutely delicious!
Now its ready to be baked at 350°F for 45 mins. Once its done, it best to wait at least 20 mins for the cobbler to cool down and set a little bit. Then you can serve peach cobbler with vegan vanilla ice cream, or just enjoy on its own!

Ingredients
- 1/2 cup vegan butter
Peaches
- 5 fresh peaches pitted and sliced (or 20-25 oz frozen)
- 1 cup brown sugar
- 1 tbsp cinnamon
- 1/2 tsp nutmeg
- cornstarch slurry mix 1 tbsp water with 1 tsp cornstarch
- 1/2 cup water
Batter
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup plant-based milk
- 1 tbsp vanilla
Extras
- 1 banana sliced (optional)
Instructions
- In a small pot, add the sliced peaches, brown sugar, cinnamon, nutmeg, cornstarch slurry and water. Bring to a boil and then reduce to a simmer for 10 minutes stirring occasionally.
- Preheat the oven to 350°F. Add 1/2 cup of vegan butter to the baking dish and place it in the oven.
- While the peaches are being reduced, make the batter. Whisk the dry ingredients together, then add in the soy milk and vanilla and whisk until the batter is smooth.
- Now you can remove the baking dish from the oven and pour the batter into the melted butter with a ladle, taking care to not mix the batter and butter together. Try to get even coverage across the dish, especially around the edges in corners.
- Add the peach mixture evenly across the baking dish on top of the batter.
- Add the sliced bananas to the batter.
- Pour the remaining syrup across the top.
- Bake for 45 minutes. Wait 20 minutes before serving so it can cool down and set.
- Serve with vegan vanilla ice cream for the perfect summer dessert!
