How to make Black Bean Beet Dip
After roasting the beets in the oven, this dip comes together quickly by just adding all the ingredients to a food processor. If your in a pinch for time, you can make this dip even faster by purchasing pre-cooked beets! Store bought beets are usually steamed instead of roasted, but that shouldn’t have an affect on the flavor.

Black Beans: These protein and fiber-rich powerhouses form the hearty base of the dip. I opted for canned organic black beans for convenience, but you can easily cook your own from dried for an even fresher taste. (Pro tip: ½ cup of dried beans yields about 1 can of cooked beans.) Feel free to experiment with other beans like chickpeas or white beans for a different twist!
Beets: Not only do beets lend this dip its gorgeous red hue, they’re the nutritional superstars! Low in calories yet packed with nutrients, beets are known to boost athletic performance thanks to their high nitrate content.
Lime Juice: A burst of zesty lime juice perfectly balances the richness of the other ingredients, adding a bright and refreshing note to every bite.
Tahini: Made from ground sesame seeds, tahini brings a creamy, nutty richness that complements the earthy flavors of the dip.

Ice Cube: This might seem unusual, but trust me – adding an ice cube while processing helps aerate the dip, resulting in a smoother, creamier texture. It also helps cool down the dip from the warmth of the beets.

Easy Black Bean Beet Dip
Equipment
- Food processor
- Small baking dish
- Aluminum foil
Ingredients
- 2 - 4 medium beets
- 1 can black beans drained and rinsed
- 2 tbsp lime juice
- 2 tbsp tahini
- 2 tsp cumin
- 1 tsp smoked paprika
- 1 cup kale shredded, packed
- 3 cloves garlic
- 1 tsp salt
- Pepper to taste
- Pinch Cayenne pepper more for extra heat!
- 1 ice cube
Toppings
- Roasted Corn
- Cilantro
- Black Beans
- Cherry tomatoes
Serve with
- Tortilla chips
- Pita chips
- Veggies
Instructions
- Preheat the oven to 425°F. Clean the beets and coat with oil and place in a small baking dish. Cover with aluminum foil and roast for 45, uncovering for the last 15 mins. The beets are done when they are tender enough to pierce with a fork.
- Drain and rinse the black beans and add them to a food processor along with the beets, lime juice, tahini, cumin, paprika, kale, garlic, salt, pepper, cayenne powder, and the ice cube.
- Process on high until the ice cube is completely incorporated and the dip is creamy and smooth.
- Add your desired toppings and serve with tortilla chips, pita chips, and/or veggies.
Notes
- Smaller beets will cook faster than larger beets, so adjust cook time accordingly. The beets I used in this recipe were on the larger size.
- You can save time by purchasing pre-cooked beets! Even though these are usually steamed instead of roasted, it shouldn't affect the flavor.
